Aloo Parwal (potato and pointed gourd) Recipe

Parwal or Pointed gourd is a not a well-known vegetable. Aloo Parwal dish is a flawless summer time food made with very little spices which can be made fast. It can be made for lunch time, dinner time or for taking out in tiffin.


Ingredients:

250 gms Parwal (Pointed Gourd)
2 Potato
1 tsp. chopped Garlic
1/2 tsp. Panch Phoran Mix
1/2 tsp. Turmeric Powder
1/2 tsp. Mustard Oil (Any oil)

Making Aloo Parwal:

  • Cut the potatoes lengthways into slices.
  • Peel the parwal and slice each into 4 pieces lengthwise.
  • Then heat oil in the a wide pan and add the phoran mixture. When it begins to pop, add cut garlic. Sauté garlic till it gets golden brown afterwards add sliced potatoes. Saute them for 4 to 5 minutes on low heat , then add turmeric powder and salt to taste.
  • Now add parwal pieces. Mix well, cover and let it cook for 10 to 15 minutes or till the parwal and potatoes are cooked.
  • Remove it in a dish and serve it with chapati or rice and curd.
