Vegetable Jalfrezi Recipe

Ingredients:
1/2 cup Cauliflower
1/2 cup Cabbage
1 medium Carrot
1/2 cup Peas
1/2 capsicum
2- 3 French Beans
1 Onion
1 Tomato
3 – 4 Garlic Pods
1 Green chilly
1/2 ” piece Ginger
1/2 tsp. Red Chilly Powder
1/4 tsp. Turmeric powder
1/4 tsp. Coriander Powder
1 tsp salt
1 tblsp. Tomato Puree
1 tblsp. Vinegar
2 tsp Cornflour
1/2 cup cream
2 tbsp Oil
Making Vegetable Jalfrezi :
- Cut and slice up the cauliflower, Carrot and French Beans into thick long pieces.
- Now boil these vegetables along with peas so that they get soft then strain them and keep it on the side.
- Then cut up into the onions, Tomato, cabbage and Capsicum into big pieces.
- Then make a fine paste of garlic, ginger with green chilly.
- Heat some oil in a large pan and sauté onions till it gets golden brown.
- Then sauté ginger garlic and chili paste for a minute.
- After this add tomato puree and fry for few minutes.
- Then add red chili powder, coriander powder, salt, turmeric powder and little vinegar.
- Put all the boiled vegetables and cook at high temperature for 5 minutes.
- Now add the cut up tomatoes, capsicum and cabbage. And cook for another 3 minutes not more or else the vegetables will lose their crunchy taste.
- Make a paste of corn flour with 1/2 cup of water.
- Mix it to the vegetables and cook on high temperature flame till all the water vaporizes and the gravy gets thickened.
- Now turn off the heat add cream to make it like served in restaurant.
- Decorate with ginger juliennes.
