Malai Kofta Recipe
Learn how to make Malai Kofta, Malai Kofta is a delicious vegetarian dish from India. Make Restaurant style malai kofta at home, it is cooked in a creamy gravy made of tomatoes and cashewnuts.
Ingredients:
200 gms Paneer
1 cup bread crumbs
1/2 tsp. salt
1/4 tsp. garam masala
10 – 15 raisins (khismish)
1 tblsp. maida
Oil for frying
For the gravy:
2 tblsp. oil
3 green cardamoms (choti elaichi)
1 green chilly
1/2 cup grated onion
1 tsp. grated ginger
1 tsp. grated garlic
1/2 tsp. red chilly powder
1 tsp. jeera powder
1 tsp. corainder powder
1 tsp. salt
5 medium tomatoes
2 pinch sugar
10 cashewnuts
1/2 cup milk
2 -3 tblsp cream
1/2 tsp. garam masala
Coriander leaves for garnish
Green chillies for garnish
Making Malai Kofta:
- Making koftas : Shred the paneer and add to it the bread crumbs, salt and garam masala. Combine them well and make a soft dough of the mixture.
- Make this mixture into 4 similar parts. Then take one ball and roll it into a flat bread or roti with your palm. Add 2 -3 raisins in the center and then make it into a ball (kofta).
- Add 1 tblsp of all-purpose flour on a plate and then roll this kofta in it. After that coat the kofta with the cornflour and keep it on the side.
- Repeat the same procedure for all the left behind balls.
- Warm oil in a pan and fry the koftas with a light hand. When they become light golden brown take them out. Mke sure you dont over cook or else the paneer will get hard.
- Making the Gravy:
- Remove the skin and puree them. Keep it aside. Soak the cashew nuts for 2 hours and then blend it into fine paste.
- Take 2 tblsp oil, in a pan heat it and add green cardamoms. Make sure you open the cardamoms before you add in the oil. After that add 1 length wise slit green chili. Then add the grated onion.
- Sauté till light golden then add ginger and garlic. Sauté for another minute.
- After this add red chili powder, coriander powder, jeera powder and salt. Add 1/4 cup of water so that the masala is mixed well.
- Pour tomato puree and sugar. Let them cook on medium heat for 8 to 10 minutes or till oil separate.
- After this add the cashew nut paste in small quantities stirring at all times. Keep the flame heat at low.
- Then add 1/4 to 1/2 cup water and simmer for a about a minute. After this add milk. Mix it well and cook for another 1 minute.
- Now add 2 to 3 tblsp cream and garam masala to the gravy. Mix it well
- To serve place the koftas, and then pour the gravy on top of it, on a plate. Decorate it with finely chopped green coriander and slit green chilies.
- Add cream on top. The delicious Malai kofta is ready to be served and eaten.
