Karela Masala Recipe
Ingredients:
2 tsp. coriander powder
1 tsp. red chilli powder
1 tsp. turmeric powder
oil to fry
5-6 bitter gourd
salt to taste
2 medium sized onions
1 tsp dry mango powder
Making karela masala :
- Slice and remove the inside part with all the seeds of Karela
- Cut the bitter gourd into thin slices.
- Clean and rub two tbs. salt around and over the karelas and its scrapings.
- Keep it on the side for 3 to 4 hours.
- Wash fully again and give a squeeze to dry the karelas.
- Heat up oil in a pan.
- Deep fry the sliced karelas till it becomes dark brown and crunchy.
- Take off the karelas and keep it on the side.
- Cut the onions.
- Heat up 3 tblsp. of oil in a pan.
- Mix in cut onions.
- Stir fry for 3-4 minutes, till they become little in color.
- Continue stirring till onions become golden brown.
- Mix in turmeric powder, coriander powder, dry mango powder and red chilli powder.
- Combine the fried karelas to the above mix and saute over low flame for about 5-6 minutes.
- Mix in salt if required.
- Garnish with coriander leaves, serve it hot with chapatis.
